Ingredients

All of the grains and flours we use are organic. We have a wide selection of naturally leavened (or sour dough) breads. We fully hydrate and fully ferment all of our doughs. A typical loaf requires a minimum of two to three days from start to finish. We develop flavor through slow, cool fermentation; not with additives.

Typically all of our products are made with a minimum 30% whole wheat flour - even croissant. We buy locally whenever possible. Our bread is elementary: flour, water and salt. Nearly all of our loaves are vegan.

All of our products contain wheat flour and some contain walnuts, almonds or pistachios.

100% Whole Wheat: Organic whole wheat, water, honey, sea salt, natural leaven.

Bagels: Organic white and whole wheat flour, water, sea salt, yeast.  Sesame seeds or a seed mix may be applied.

Baguette, Ciabatta, Filone: Organic wheat flour, water, sea salt, yeast.

Canele: White flour, egg yolks, whole milk, organic sugar, sea salt, vanilla, rum.  Beeswax may be present from the molds used to prepare canele.

Croissants, danish, cruffins, apple sticky buns: Organic white and whole wheat flours, water, whole milk, butter, organic sugar, sea salt, egg, yeast.  May contain nuts, mushrooms, chocolate, fruits, brandy, or spices depending on the preparation.

Granola Classic: Organic rolled oats, almonds, organic sunflower seeds, cranberries (sugar), raw honey, dark brown sugar, organic sunflower oil, maple syrup, sea salt, spices.

Hamburger and hot dog rolls: Organic flour, whole milk, levain, butter, eggs, organic sugar, sea salt, yeast.

Italian: Organic white and whole wheat flour, water, sea salt, yeast.

Miche: Organic whole wheat, spelt, rye flours, water, levain, salt. 

Multigrain Sandwich: Organic whole wheat and white flour, water, organic grain mix (millet, flax, barley, rye, corn, and wheat), organic sunflower oil, organic sugar, sea salt, yeast.

New York Rye: Organic wheat and rye flour, water, sea salt, caraway seed, natural leaven.

Pain au Levain: Organic white and whole wheat flour, water, sea salt, natural leaven.

Pretzels: Organic white and rye flours, water, whole milk, levain, butter, sea salt, yeast.

Raisin Fennel: Organic wheat and durum flours, organic raisins, water, fennel seeds, sea salt, yeast.

Sunny Six Grain: Organic wheat flour, organic whole wheat flour, organic seed and grain mix (sunflower, flax, millet, rye, wheat, barley, corn), water, sea salt, natural leaven.

Toasted Sesame: Organic whole wheat flour, organic wheat flour, toasted and soaked organic sesame seeds, water, organic rye flour, sea salt, natural leaven.

Wheat Sandwich: Organic whole wheat and white flour, water, organic sunflower oil, organic sugar, sea salt, yeast.
